Abstract

SAFEWINE will combine scientific expertise from environment management, oenology and foster interdisciplinary collaboration to address potential human health and environmental risks. The aim of this proposal is to investigate the content of pesticides during winemaking processes of Fetească neagră and Cabernet Sauvignon wines and from vineyard soils, by monitoring and proposing actions to reduce / these chemical compounds that could result from technological or anthropogenic sources. Additionally, this project will determine the influence of pesticides on wine quality parameters, volatile compounds and antioxidant activity.
